Gluten Free Strawberry Yogurt Muffins



Ingredients:

2/3 cup sugar

1 large egg

1/2 cup vegetable oil

1/3 cup milk

1 tsp vanilla

1 1/4 cup gluten free flour

1 tsp baking powder

1/4 tsp salt

1/2 cup vanilla Greek yogurt 

1 cup strawberries, chopped about the size of blueberries (save some for the top)

About 1 tbsp sugar for the top (optional)



Directions:

Step 1: Preheat the oven to 375°F and grease or place paper liners into muffin tin.

Step 2: Add and mix all ingredients into a mixing bowl.

Step 3: Pour batter into prepared muffin tin and sprinkle sugar and strawberries on top.

Step 4: Bake for 25 minutes and let cool. Enjoy!
